Fiona developed this recipe to help healthy but busy home cooks easily create a wholesome replica of their favourite takeaway, but without any artificial preservatives, additives, MSG or refined sugars - unlike many leading Asian sauces. Expect warmth and brightness from ginger, and plenty of spices including star anise, cardamom, turmeric and fennel. This sauce is also a multitasking hero. It pairs excellent with vegetables, chicken, tofu or prawns, and works just as well as a marinade.
