UK sushi sales hit record £228 million as consumer demand accelerates
Sushi’s popularity in UK shopping baskets continues to surge, achieving a record £228 million in sales over the past year amid growing consumer interest in healthy, convenient dining options, fuelled by cultural trends and retailer innovations.
Sushi’s rise in UK shopping baskets has continued at pace, with Seafish saying sales hit a record £228 million in the 12 months to May 2026. The public body said the category has become one of the seafood sector’s standout performers, with retail value sales up 215% over the past decade and growth of 13.6% in the past year alone. That momentum comes as retailers and foodservice operators lean into sushi’s appeal as a quick, visually striking and comparatively healthy meal choice.
According to Seafish market insight analyst Richard Watson, that blend of convenience, health credentials and stronger interest in Japanese and wider East Asian culture has helped broaden sushi’s reach, particularly among younger consumers. The 2025 Seafish report pointed to similar drivers, saying sushi had delivered a 166% rise in value and a 119% increase in volume over nine years, with salmon accounting for half of sales and mixed seafood sushi for much of the rest.
The category’s strength is not confined to supermarkets. UK operators such as IRO Sushi and YouMeSushi both reported double-digit revenue or sales growth in recent trading updates, while Wonderfield Group said its UK kiosk estate recorded its strongest sales week ever after revamping offerings in Tesco and Asda. Those results suggest sushi is benefiting from a wider shift towards fresh, portable and premium-feeling food on the go.
Salmon remains the anchor of the market. Seafish says it is the most popular sushi filling in the UK and now makes up more than half of sales, while wider salmon retail data from SalmonBusiness shows the fish category itself remains one of the strongest in British grocery. The timing is apt for World Sushi Day on June 18, an annual event launched in 2009 to encourage more people to try sushi at home, in restaurants and across social media.
