This Scottish salmon has been reared in the cold clear waters of the west coast, Hebrides and Orkney and Shetland. Coming directly from sea to shelf it has been dry cured with sea salt and demerara sugar, rested, and smoked three times over oak and cask chippings in Morrisons own kilns in Grimsby to develop a rich but balanced smoky flavour, deep colour and unique buttery texture.
