Our Scottish salmon comes from responsible farms on the west coast & islands of Scotland. Once filleted the sides are cured with a bespoke blend of sea salt & demerara sugar. Once cured the salmon are hung to be smoked which is the age-old traditional way of preparing salmon for smoking. The sides are smoked in our traditional brick kilns by master smokers for 15 hours over a mix of oak and applewood for a mild yet deep smoke profile. Once smoked the sides are sliced and packed by hand to ensure only the best salmon reaches the supermarket.
